Ok, if I start the game with say 5 def, 3 mid, 2 att.

Am I right in thinking that it is impossible to change this to 3 def, 5 mid, 2 att during the game?

Yes..its something that I have seen also...once you set the orders ...they can not be changed.
It does not matter if the sub has mid order...he will inherit the order of the subbed player :(
